Since I started my wedding cake business I soon came to realise that weddings are no longer about following rules on colour and traditions and are increasingly finding new and exciting ways to push the boundaries and wow the guests. This is why I absolutely love having my part in the industry because I find that pushing boundaries is so important when finding inspiration to create exciting new designs.

This year I have been really inspired by new techniques being used to add texture to iced cakes.Wedding cake from The Cake Temple
Bas relief really gives a bold texture that can work wonderfully with metallic edible paints giving a very different feel to a cake depending on the colours. From dark and sultry to white and whimsical, there seems no end to the creative fun that can be had with bas relief.

Another technique I have fallen in love with is layered paints in a very moody modern way to offset bright colourful flowers. The contrast of the cool industrial feel with the bright botanicals together can be quite striking to the eye and with winter approaching, it can be very fitting to the season.

Lastly, marbling seems to be all the rage, from fabrics to porcelain and also now with cake icing. This is a surprisingly simple technique that leaves a clean modern and classy feel when metallics are added.

With this creation I have used edible wafer paper flowers as they give a crisp and slightly translucent effect rather than the more solid style of sugar flowers. I find the wafer paper flowers to be very adaptable as they work beautifully with light fresh designs and yet look amazing with dark sultry styles too. The fun can really start when you consider that wafer paper can be printed onto with edible ink! Something I plan to experiment with in the near future.
