We love this Thai ginger and cashew soup, which can be made from raw ingredients in only 5 minutes, with very minimal prep required - you can even leave the stalks and skins on most of the veggies. The power of the Vitamix means the blades blend the ingredients extremely finely, and the friction generated actually heats the soup so that it is ready to eat straight from pouring it out of the container. Recipe for Thai and cashew soup with Vitamix

Ingredients:

2 cups (480 ml) water

1 carrot, halved

1 slice cabbage

1 stalk celery

1 slice red bell pepper

1 slice zucchini

1 green onion, diced

1 slice lemon, seeded

½ garlic clove, peeled

1 inch (3 cm) fresh ginger root

1 slice chili pepper

1 cup (125 g) raw cashews

1 Tablespoon fresh cilantro leaves, chopped

1 teaspoon honey

1 vegetable bouillon cube

 

Method:

Place all ingredients into the Vitamix container in the order listed and secure lid.

Select Variable 1.

Turn machine on and slowly increase speed to Variable 10

Blend for 5 minutes or until heavy steam escapes from the vented lid.

Serve immediately.
